What to cook when you're too tired to cook

Low-effort doesn't mean low-quality. Five patterns for dinners that need one pan, few decisions, and almost no attention.

The meals that rescue tired evenings share a shape, not a cuisine. Learn the shape and you can improvise it from whatever is in the house.

1. Something in broth

Stock or water plus miso, stock paste, or a spoon of curry paste; noodles or leftover rice; an egg or a handful of frozen vegetables. Ten minutes, one pot, and it feels like care.

2. The tray bake

Protein and chopped vegetables, oil, salt, a bold spice mix, one tray, hot oven. Active time is the chopping; the rest is the oven doing your job for you.

3. Eggs as dinner

A frittata, shakshuka, or fried eggs over rice with chilli oil and something green. Fast, cheap, and protein-forward enough to stop the 10pm snacking.

4. Upgraded starch

Pasta, couscous, or instant noodles plus one fat, one acid, one crunch — butter and lemon and toasted breadcrumbs, for instance. Three additions is what separates a sad bowl from a good one.

5. Assembly, not cooking

Tinned fish, good bread, pickles, a tomato, olive oil. No heat at all. Deciding to assemble instead of cook is itself a legitimate dinner strategy.
